Last Friday, our Scouts had a fantastic session led by current parent, Eva, where they learned how to make delicious energy balls. It was a fun and educational experience for everyone involved! As always the most anticipated part was the taste test at the end.
For those keen to give it a go the recipe is:
RECIPE for 30-40 medium sized energy balls
200 gr dried, pitted and chopped dates and/or apricots
200 ml apple juice or orange juice I sometimes squeeze 2 oranges and use the zest, too) Or just boiling water
2 TBS coconut fat - OPTIONAL
140 gr medium or fine oatmeal or oats
6 TBS mixed sunflower seeds, pumpkin seeds, Flaxseeds (as desired) lightly ground
4 TBS desiccated coconut + a little extra for rolling
2 TBS plain cocoa
1-2 Tsp cinnamon
1 TBS honey, OPTIONAL – if desired a little sweeter
Method
Put dates/apricots, coconut fat (if using) and oats in a bowl or blender, pour over the hot juice / water and blend briefly (a hand blender also works)
Add the remaining dry ingredients and mix well to combine – use your hands
Shape Balls/bites in the size you like
Roll in a little extra Coconut (or Cacao)
Adjust quantities as needed.
Wrap in paper or just keep in an airtight container in a cool place or the fridge for up to one week.
Further additions/variations:
Dried cranberries, freshly squeezed orange juice and zest, chia seeds instead of flax seeds....
